Breast em out, stab em with a fork a few good times, soak em in dales sauce, a little vinegar,and a bunch of lemon juice. Wrap in bacon with a strip of red bell pepper and onion held by toothpicks. Throw em on the grill, don't overcook or like they said, they'll be tough anddry. Soaking in the marinade helps to keep em from dryin out a little. Jalapenos great too, any kinda pepper is good with em.
