Condition of the animal has more impact on meat quality than gender or age.
If they are skinny then they will taste rank.
Have eaten some big Boars that taste fine.
Remember to cut the nuts out as soon as you kill the animal. (Male)
Also no need to hang. Freeze it down sooner the better.
i.e. Unlike Deer/Elk etc.

Best meat is in the arse end.
Agree with comments above. Loins Hams and sausage the rest.
