The sks will work just fine for coyotes. Use FMJ and you will not damage the hide as much as hollow points or softpoints, should just poke a nice clean hole. Accuracy past about 150 yards may be an issue, though I have a Yugo sks that shoots way better than it should out to 400+ yards. With iron sights your front post starts getting bigger than your target out a couple hundred yards or so. If you can get ahold of a range finder play with the sight adjustments and your hunting loads, and mark with some finger nail polish to find your 100 yard increment zero's. I would stick with the iron sights, most of the scopes and mounts for the sks are junk and do not hold a very good zero.
