I also start eat my deer that same day, if I have time (i work) i completly debone the whole deer, tenderloins first for supper. I remove ALL fat and add in beef suit, adds to flavor. Double or tripple wrap keeps from burning. Lunch today was lean ground with onions, yum, it was well done, but steaks get very little cooking. Wraped properly meat will be good for up to 2 years, but try to eat it sooner. I have found some good sights on processing a deer, that how I learned to debone the animal.
