Best advice is to cut it yourself Its not hard to do with good knives and a good meat saw only take the meat scraps and chuncks in to be made into burger and weigh them befor and after it should weigh more if beef fat is added I lost almost half a deer once becaues of a greedy bucher then learned to cut it from my dad
