I have to get a grinder. but I have about 5 pounds of trim plus another pound maybe pound and half of beef fat I am going to add to it.
You may want to try Boston Pork Butt with it. I usually don't add it unless I'm going to make burgers. The rest of the ground meat has no additional fat in it. I actually prefer as little as possible for tacos, casseroles, etc. A friend turned me on to using 1/3 pork butt, which you can catch on sale really cheap. It has plenty of fat to hold them together and I think they taste just as good as any other burger you can make.
