Here are a couple of other options:
1. Just use your trimmings (small pieces) for stir fry or in stew or soup. Forget about grinding and mixing altogether.
2. Use the small pieces for jerky. There's a great product out there made by High Country that you can make excellent jerky as simply as you can imagine. Look for it in the meat dept. where the marinades are.
3. If you're looking for something good to grind with your venison, try bulk breakfast sausage - about a 1-5 ratio (1 lb sausage to 5 lb V). Bulk sausage comes in various flavors, so you can choose the one you like best.
