Here's a real simple way to cook rabbit...
Disjoint the critter into 5 or six pieces..I usually detach all four legs, cut the back into a couple of pieces, and discard the ribcage...
Put some water in a kettle with some salt and pepper..I also add a bay leaf and a quartered onion, but that's not necessary..
Bring the water to a full rolling boil and drop in the rabbit pieces...When the water returns to a boil, cover the pot and lower the heat so that it just simmers gently... Simmer 1 to 2 or hours, or until the meat is fork tender..
Melt a little butter and a little olive oil in a skillet..Remove the rabbit from the broth and season itwith whatever you like ( I generally use a cajun seasoning or seasoned salt of some kind) Sautee the rabbit in the butter and oil until it browns up nicely... Works well with squirrel, also...
