I would highly recommend the READYREST. It is a full containment rest that holds the arrow solid in any position. My needs were the same as yours as I often have long stalks to get to my deer.

This rest is easy to adjust, easy to paper tune, and is completely silent! It also improved my accuracy, and increased my bow speed (although only 2 ft/sec). With only 2 adjustments, I achieved perfect bullet holes in the paper.

I was leaning towards a fall-away rest, but needed my arrows to be held solid during stalks that often include crawling on my knees and stomach. So far, it has passed every field test for me.
