If you can live with a bolt gun you might look at Remington's stainless/synthetic Model 7 in .308. Just mount a peep rear sight, unscrew the aperture and use the hole as your rear sight. Fast and accurate.

Have you considered the .44 Magnum for deer? I think Marlin may be making a lever gun in stainless.

I use a Ruger .44 Carbine for the same type hunting and it is perfect. It's not stainless but I put up with the extra maintenance because it works so well. I've killed deer with both carbine and revolver and am impressed by how well the .44 cartridge works at short range.
