RE: how to butcher
I'd recommend getting one of the DVD's out there that go through the whole process. I got the one from askthemeatman.com. It does a good job of showing boning out and going through all the cuts. They actually carry three different DVD's: Dressing, butchering, and sausage making.
Anyone got recommendations for others? Their seasonings and such are top-notch too.
Descriptions on websites are good, but there is no substitute for watching it done, preferably in person of course, but ok on TV.
