I like to do the following for my jerky:
Clean meat, and slice into thin strips. Mix the following marinade together:
1 bottle soy sauce
1 can pineapple juice (small can)
healthy dollop of liquid smoke
1/4 cup worsteshire sauce
black pepper
crushed red pepper
chili sauce (the kind bought at asian food market).
2 Tablespoons brown sugar.
Mix this all up, place the meat strips in tupperware with marinade for 3-4 days.
Place the strips in dehydrator, and sprinkle with black pepper, then dehydrate, rotating the trays every 4 hours or so until dry (meat should break whe bent, but not crack).
This is almost the same recipe I use. 1 tip for you though would be to slice the meat while it's still partially frozen. It will make the process alot easier on yourself.
