Skin on will do nothing to help preserve the meat as it will act as an insulator! Like kevin said if cool enough it won't hurt to hang hide on or off outside, just try to keep it out of direct sunlight. I just prefer to have the hide off to ensure the carcass is cooled as quickly as possible, my deer don't hang long enough toreally skin over or freeze. If to warm they hit the fridge once the carcass comes to ambient temperature..basically body temp is gone. If the fridge or cooler isn't possible I bone them at this point rather than risk spoilage.
