I've never eaten carp. I enjoy canned sucker and I love Burbot. Burbot is actually one of my favorite fish to eat but there isa small trick to cleaning them. When cleaning you shouldn't open the belly....... cube up the meat and boil it in salt water, then fry for a few seconds in a *hot* cast iron w/bacon fat...... dip in garlic butter and its very similar to lobster.
