Consider hunting Chamois -- little goats that inhabit the mountains -- and Ibex -- I believe a kind of sheep. You mention "red stag." There is something very like an elk in Europe -- maybe the red stag -- which would be pretty cool to hunt. First on my list would be Chamois hunting, but that is just me. Indeed, take advantage of your stationing to do some European hunting.
