Default Can I train a 3 year old lab to retrieve birds?

My 3 year old yellow lab, (Buck), is one of the best damn upland bird hunters I have ever seen. His father was 5 time national champ. But I can't get him to retreive a fallen bird, of the upland or waterfowl type. We never really had him trained by a pro, but we thought we did it the right way. We trained him with a dummy on land, and in the water. He would always fetch that, but never a fallen bird. He gets close sometimes in the field, but doesn't come through. For example, he will find the bird if we are upland hunting, sometimes pick it up, but then drop it right away. This is the same with waterfowl on land. We have yet to take him duck hunting in a boat, but when we do we are almost certain he will not fetch that either. Is it possible to send him to a school and have him trained to retrieve, because if that is the case, I will do it. But I think he is to old to be trained. Just a side note, he is very obidiant when it comes to everything else. Thanks for your help.
