I don't know how you guys can stomach the brain, against my better judgement I tried it once and it just didn't appeal, it has a funny texture. I try and get head shots so I can save the rest of the body meat. I eat just the meat, none of the organs (i.e.- heart and liver), they have a funny taste, I guess it's just me. I use the stand on the hind feet and skin using the tail as a handle method, but it does help if you wet it first to keep the hair off the meat. I gut it as soon as I get all the skin off, it makes the process a little less messy to me, but I always try to skin the squirrel within a half an hour of when it was killed, I find the quicker you are to skin it, the better the meat tastes.
