Here in Minnesota it depends on where you hunt; This year I can shoot up to 5 deer because one of the areas I hunt is an "intensive harvest" area.
The worst was in the early 70's (I think) when the deer herd was so low, the DNR closed the season for one year! I sat in my stand during what should have been opening day armed with a 35mm camera and telephoto lense. "Shot" one small doe.

I hunt NorthWestern NC.
Bow Season: Sept 11-Nov 12
M/L: Nov 13-Nov19
Gun: Nov 20-Dec 18
Maximum Season. 2 per day not to exceed 2 bucks and 4 does.
But can move to Central NC maximum season and kill 4 bucks and 2 does.

We start with a 30 day archery season , although the bow hunters can also hunt during the 2 week firearm season that comes next . You can take a buck and a doe or 2 does .
Firearms is 2 weeks and is buck only .
Muzzleloader is next and runs 2 weeks , with a 1 week break between it and firearms . You can take either sex .
Last is archery again , which runs about 4 weeks , and you can take does with a crossbow . You can only take a buck during late archery if you haven't already filled your one buck tag until '05 when you can also take your one buck with a crossbow .
We are a "one buck" state , but you can take up to 4 does depending on what county you're hunting in . Then there's the military refuge , urban deer zones , and park reduction hunts whose take doesn't count against your bag limit . We also have depredation permits for the farmers which also don't count against your bag limit .
