unusual circumstances; We gutted the deer 3 hours after it was dead. The deer was just starting to bloat. The outside was cool, but the inside was still hot.
No smells. The butcher said it's fine. What is your opinion ?

Should be fine, It doesn't take very long for gasses to form in the gut. Remember, that hollow hair on a deer is very good insulation, for the deer, it is there to keep it warm on the inside, it helps to prevent heat from escaping. Why did you wait so long, couldn't find t?
