I would say the white oaks are less bitter....because to be none of them are sweet. Deer love them over nearly anything else though.

It is definately the taste. If you want to really up your chances of narrowing it down you can try putting triple 10 fertilizer around the drip edge of your favorite white oak. I've been doin this for a few years now and it really makes a huge difference.
