I slow cook on a charcoal grill...works well for me.

I have made 3 different batches of jerky using PreachTony recipe (which is fantastic), with slight variations for my palate...

I have use a multi-level rack to lay the strips of steak onto with a drip pan underneath.

I let the steak thaw about 1/3 of the way, which allows me to cut the steak into 1/8"-3/16" strips easily with a sharp knife, after trimming all the fat.
I then marinate the steak for 1-2 days, drain and pat down with paper towels.
Remember that any moisture effects your jerky, that's why I pat down the marinaded steak.
Cook for about 2-2 1/2 hours, opening the door every 20-30 minutes to let some of the moisture escape more easily.
You must test the consistency of the meat to your liking, as some like it chewier than others.
I've found that it will continue to harden a bit more once out of the oven, so a little less when testing is a good idea...

I'm personally not a fan of leaving the door open, as I have a 2 1/2 year old spark plug running around!!!.:)
