If your son and/or wife are recoil sensitive you could use a 120 grain bullet, but the 140 grain is the main stay for the 7mm-08.

I use 140 gr. Winchester power points. I haven't had a deer go more than 40 yds after the shot. .

I've used my Remington model 700 for 15 years now, and love it. Started shooting the 140 gr. Winchester Ballistic Silvertip's several years ago, and they do some damage. Before that, I shot Remington ballistic tips, which did great also.

A lot of my buddies rag on me for using this caliber, but I can't see me ever switching up. Great choice!
