Depends on the area and the age of the deer. If I'm hunting an agricultural area that utilizes spray (herbicides) I won't take the liver of older deer as I think the toxins accumulated there could adversely affect me down the road.

my dad always plans for us to take the liver and heart..this year i brought a bag and all for them(2 mile drag we need to put em in something)..but we dropped 3 deer that day and that extra 20+ lbs of liver and heart would killed us...we had the first 2 liver and hearts all packed up in the bag in the snow...after i got the third my dad dumped the bag and said lets start draggin..i wouldnt like it anyway...the smell gets to me...

No liver for me---too many toxic metals, herbicides and pesticides nowadays to eat the liver. CT strongly recommends against deer liver consumption due to Cd+ metal toxicity.

Not that I would really worry about it, being that it's a relatively small single (or double) meal once a year, but cancer runs on my paternal side. No chance in taking extra risks like that...

Keep the heart and grind it up with the shoulders for sausage, adds about 5# of meat.

I am off to Ice fish this morning going to get warm 25 or so, but I guess you don't want it to warm when you are standing on water.

only deer liver I eat now is from very young animals(yearlings) due to heavy metal,nothing beats liver and heart as finger food during a card game at camp
