protecting carcass once skinned??

We ussually just leave the hide on until it is time to buther them. It's alot easier to keep it clean and it doesn't seem to hurt the meat. If the meat isn't frozen than we lay it between garbage bags in the freezer until it is frozen, than we zip it through the band saw.

I skin itASAP. I don't hang the deer,as my temps don't get low enough (consistently) until after the season is over. I'll quarter him out in a few hour rafter the kill. I don't worry about wrapping. Never had meat dry out.
