Don't thank me thank the guy who posted the pics and instructions. As stated I just "stole" them from him, I wish I could take credit for it but I can't. This is a wonderful way to enjoy the unique taste of wild ducks. I think most people make the mistake of overcooking/over seasoning ducks to cover the taste rather then enhance and compliment the taste.

Yeah, I agree with you, especially the overcooking part.Just pink is the best way. I will be trying that recipe though ASAP. Duck is one of my favourite wild meats and I am looking fornew recipes all the time.
