Default When should I start hunting my quail?

When I walk my dog every morning at 6AM or right at sunset and I can whistle and they start talking up a storm in 2 different parts of woods on both sides of my house. They are also all up an down laying low in my 10 foot ditches. I wouldnt begin to know how to estimate how many birds I have but is there a good way to tell how many you have? Also whats a good number to have before you start hunting them? Im ready for some quail and grits.
