Turkey legs
I heard too many times, wild turkey legs are not edible.
I 100% disagree. 10 hours in the crock pot, very very tender. Meat just pulls off the bone and tendons. Do NOT throw out turkey legs !! Meat is what you make of it. |
I've ate them. Definitely different than a farm bird.

use them for turkey salad. makes excellent sandwiches.
|
I freeze the legs, then cut into pieces on my band saw, cook in my instapot to make bone broth. Strip the bones and cartilage out and make a stew. A little work but very worth it.
|
The legs are full of sinew and very thin bones. However if you cook the soft the carefully remove the meat it is good. I just don't recommend trying to eat it like a drumstick.
|
I'm sure if one cooked an old leather belt long enough it would be tender. Lol the only part of a wild turkey I eat is the breast.

You’re absolutely right, they just need a little love. Ten hours in the crock pot sounds like the perfect way to turn those legs into something super tender and delicious. Letting that meat slowly break down until it practically falls off the bone? Yes, please!
I’m with you. don’t throw them out! With the right method, turkey legs can be a total game-changer. Meat is all about how you prepare it, and it sounds like you’ve nailed it! What's your go-to recipe? |
Thanksgiving turkey came out of the crock pot. My wild turkey legs went in the used broth. 10 hours later, perfectly tender wild turkey legs. Minus a few TTX pellets.
|
The legs and wings go into soup at my house.
|
And the bones from both the wing and drumstick after I'm done are made into turkey calls.
