I believe what you are referring to is to set up the jake facing you (because the tom will want to get face to face with him) and the hen' s rear facing you (because the tom will want to get behind her). This gets the tom looking away from you so you can make any last minute adjustments. This is a good set up for bowhunting because it can give you a chance to get drawn. Be careful though, The turkeys eyes are positioned on their head so that they can see behind them somewhat.
