I just hand ' em a bar of soap and point to the shower.

Actually, it depends on how I plan on cooking the bird. First remove the feathers. I' ve done this in 2 different ways. One is to simply pluck the bird, and the other is to scald it in boiling water and, if done correctly, the skin peels off taking the feathers with it. The problem with this is that if you scald it too long, it sets the feathers and makes it tougher to pluck them out. Either way, have a garbage sack near or around the bird to collect the feathers or they' ll be all over the neighborhood or countryside.

If you want to bake the bird, leaving the skin on helps to keep it from drying out too much. If you want to fry it whole, skin on-skin off, matter of taste. If you want to cut the breast into strips or cubes and fry or maybe tenderize with a mallet, you won' t need the skin on.

If I want to make a call out of the wingbone, I cut it off at the " shoulder" so I can get all 3 bones. There ain' t much meat there anyway.


As for the drumsticks, too big to fry in the skillet whole. They make good seasoning stock for soups or in dumplings. I don' t usually worry about the skin.

Cut the head off at the base of the neck below the waddle. Then make a cut at the bottom of the keel where the breastbone comes back into the belly. With the feathers off, you will see a sort of point back near the vent or cloaca. Cut it big enough to reach in and remove the insides. If your lucky, the trachea will come with it. If not, remove it from the neck end.

Cut off the feet, and rinse him off. Ice that ole boy down, and you' re done.

I usually skin them,Make a cut thru the skin then pull once you have removed all the feather' s and such,I do cut the feet off first at the joint at the bottom of the drum stick.
Then make a cut so you can remove the inside' s(gut' s)
Wash it in cold water,place it in a freezer bag,Remove as much air out of the bag as you can,seal it up and freeze it.

For baking it I usually use a roasting bag,Cut up a apple,Put half inside the bird and the other part around the outside,This help' s to keep the bird from drying out.
I also will cut up a onion along with the apple and do the same thing as far as some inside some outside,Then if you want put some cooking oil on the outside of the bird,Breast.You can inject some differnt types of juices as well if yoou wish.
