hens are generally greyish/brownish...head has no color...normally dont have a beard...and normally dont strut...and i dont think they can gobble..they can have beards(not many do but its not rare either..) and ive seen pics of hens strutting so thats possible...jakes usually have short beards jutting out from their chest and the middle of their fan while in strut will usually be longer than the other feathers left and right of it....toms usually have long hanging beards and longer spurs than jakes...jakes usually have bumps...jakes and toms are usually colorfull...heads can be red or white....they also have a snood hanging from their beak that hens dont have....hope this helps...and read the words like usually because there can be exceptions....

You mean tell the difference between species or sex?

The second part of your question is which ones can you hunt? That depends on the state and the time of the year. Some states have both fall and spiring seasons and some only one season. I am not aware of any states that restrict hunting gobblers or jakes during any part of their seasons but many states do not allow hunting hens or may only allow them to be hunted in the fall season. You really need to check out your local laws. Hope this helps.
