Shooting at a deer vitals target is great for teaching young kids and new hunters. Problem with them though is that they are only two dimensional We tell our kids in our hunter - trapper education classes to only shoot deer standing broadside in the heart/lung area showing them a deer with that overlay. That is what we are required to teach. I personally don't agree with that because there are other good, even better shot opportunities presented. I told my own children and grandchildren to imagine a basketball setting slightly back between the shoulders and on a broadside or quartering away shot, aim for the center of that basketball. Your result will be a dead deer 100% of the time with bow or gun.
I wince every time I hear someone tell another hunter to shoot the animal in the shoulder. Depending on the angle this could result only in a deer with a severely damaged front leg.
