Turkey Chile Verde!!!!
Giving amounts in chile recipes is for wimps, if you like a certain flavor add more,if not add less Ground turkey meat lightly browned Saute' onions,jalapeno peppers, celery and garlic Add canned chopped chiles(green) and chicken stock (turkey if you got it) Spices: cumin (add some in the beginning and some at end) a little oregano and thyme. A lot of cilantro. Simmer until cooked (about 30min) Add a can or two of white beans (drained and rinsed) and your reserved turkey meat, simmer for 20min. When serving add more cilantro and choppes green onions, salt to taste Don't simmer too long. The trick is not to cook the turkey too long in the soup Oh yeah and for breakfast heat some up in a skillet, crack a few eggs on top and cover until eggs are done. |

NyDeer, venison spiedies are also fantastic and would go perfectly with the Zatziki (sp?) sauce the greeks use. You wouldn't happen tohave a greek friend that would share that recipe with all of uswould you :).

The greek sauce you're referring to is easily made by taking yougurt and draining out the fluid through a coffee filter. The other ingredients are salt pepper and garlic (lots). You can leave it thick or thin it out. Draining the yougurt gets rid of the sour "yougurty" taste. You can also use sour cream.

Ah Broome Country...I remember going to Broome County Arena for hockey and baskeball games and getting speedies at some shop near the bus station. Delicious. Thanks for the recipe/trip down memory lane (i'm from ithaca originally) - looking forward to try this out!

I'm not sure if anyone has tried this or not, but marinate turkey chunks in italian dressing for a day or so. Next take them out and wrap them with bacon and throw them on the grill. It's very important to use tooth pics when keeping the bacon on while grilling. They will be delicious. The bacon helps them cook yet helps them remain moist on the inside. YUMMY!!!

Hoppastoppa how far west you talking? I live in California and we have quite a few turkey (if you know where to go). |
