ears, nose, lips, everthing. You skin them 'cased', meaning the fur is 'tubed' off the carcass, rather than splitting it down the middle.
Start at the back legs, first do a 'ring' cut at thefirstjoint orthere abouts, next,you'll notice a color change in the fur on the back legs. Follow this line with your knife down to the a-hole. Cut around a-hole, once your cut from both backlegs meet at the a-hole you can start skinning down, once you have skinned past the tail, the middle section of the hide should just pull down like a sock.
Front legs- I usually open my front legs ahead of time, on a similiar color change line as the back legs, i split the fur up to the coyotes elbow, do a 'ring' cut at about the coyotes wrist, you should be able to pull the fur off the leg bone up to the elbow.
once you have pulled the hide down to thefront shoulders you should be able to push the leg up through the hide ( similiar to taking you arm out of a shirt) it may take a little more skinning to get it to go.
once both front legs are through continue skinning down to the throat.
The next thing that comes up will be the ears, when you get to the ears you want to cut right through so you can see the ear holes, to do this simply cut straight in toward the skull, this should reveal the ear holes and hence, removed the ears from the carcass, now just continue skinning out the face, pulling downward on the hide as you skin, be sure to get all the lips and black around the eyes. Skin to the tip of the nose then cut through the cartilage on the tip of its nose and you should have a cased coyote fur in your hand.
