Tonight will be cheese ravioli with some Boves meatballs in Mrs. CI's homemade sauce. I grew up going to Boves in Burlington, Vt. Friday night the line would be out the door and down the street. Best cheap plate of spaghetti and meatballs anywhere in the north country. Alas.... the kids didn't want to keep it going and they closed after over 50 years. They still make the meatballs and sauce which is sold all over the US. The original building where it all started is still sitting there empty for the last 2 or 3 years.

Tuscan Mac&Cheese ala Mom. Yeah remember when you were 5yr old or so and mom tossed some canned tuna or chicken in a pot of Kraft Mac&Cheese?

I was craving it without the ridiculous amount of sodium and other garbage in the Kraft.


Barrila elbow pasta
Sonoma kale pesto white cheddar sauce
Pesto with imported Genovese basil
Grated REAL Parmigiano-Reggiano
A little cream and butter
My best Tuscan EVO
Heavy on the garlic and Tuscan no salt seasoning blend.
1 can of tuna
1 can of white meat chicken
Fresh cracked Tellicherry black pepper.

Reminds me of when I was first married and we didn't have a lot of money so Tuna noodle casserole was a weekly occurrence.

Very simple chicken noodle soup. Dash of mild Aleppo pepper when served. I dont cook the noodles in the soup so leftovers dont turn to mush. I had another bowl later with chickpea pasta for the protein boost. These are some good egg noodles in the pic.

Bone broth
Trimmed thigh meat
Celery
White part from green onions. I dry the green part for homemade green onion dip but its good in it too as a garnish.
