Good question. A cookie cutter and a filet knife. You stamp out the meat from the wings with a circle cookie cutter. If it's sharp enough you can go all the way through through the wing meat. If not you can just cut the shape out with the filet knife. It is excellent meat. If you've had GIANT scallops in a restaraunt, you've had stingray!
