In my hunting pack are 2 knives. 1 A Wyoming knife witha little screwdriver and extra blade. I love this thing, It opens an animal's belly so fast you'd think it had a zipper on it. The other is an old K-bar. It's a bit big but the extra mass is great when splitting a brisket open. It must be one of the hardest pieces of metal I've ever seen made into a knife. It sharpens to an incredible edge but takes a while to get there.
For everyday use I carry a Kershaw whirlwind clipped in my right pocket. I feel naked without it

Any decent knife will work fine for deer, if you want to do elk and bigger a heavier fixed blade is good. The one thing I will say is that the Wyoming Knife is GREAT. So pick whatever knife suits your fancy, but be sure to get a Wyo knife.
