Buck, Folding Hunter. Dad gave me one 20+ years ago it has never let me down, skinned umteen deer and stays sharp. Around $28.00

I bought a Browning folder when I was 14, 21 years later it still does everything on an animal I need. I also own a larger fixed blade Buck. Both have there purpose.

Older knives with softer steel are easier to sharpen but the hard steel knives stay sharper longer.
I use a fixed blade Buck personal mostly but one of my hunting pals always likes to use his giant Gerber fixed blade. Looks like something Rambo would use.

I keep several knives sharp and ready, but my two favorites for dressing out deer are the Buck Vanguard (rubber handle) and an Shrade Old Timer. I carry the old timer on my belt with the Buck in my pack usually.

I carry my Leatherman multi-tool. The blade is razor sharp and the small bone saw comes in handy to split the pelvic bone. I cannot tell you how many times in the woodsI have needed the pliers or other gadgets within this multi-tool. Why carry just a knife when for 6 extra ounces you can carry a multi-tool.
