You are getting lots of good advice and it all sounds basically the same. The 7mm will do anything the weatherby .270 does and more. It will do it cheaper and with around the same recoil. Nothing wrong with building a custom rifle but you can order a Sako 75 that has a new action length tailored to the short mags if you need a .270 and it will likely shoot as good as a custom or better for less money and tinkering.
