Since this is fresh in my mind after the Wisconsin deer season I thought I would post it now. I use a 7m-08 for the first weekend and then am restricted to use a slug gun in the second part of the season because I go to a shotgun/pistol/muzzleloader only county. I have a Mossberg 695-rifled barrel and an inexpensive sight.
What is a the most accurate slug for this gun?
What scope would be recommended for this gun? I have looked at Nikon and Leupold.
Should I just trade this gun in for a Thompson Center Omega muzzle loader?

The Mossberg will serve you well and since you already have it, I'd use it unless you just want a muzzleloader. As with any firearm shooting a single projectile, you'll have to experiment with which ammo shoots best from it. If the barrel is rifled, you don't need rifled slugs. Try Sabots from different manufacturors.
The Omega is one nice gun. But you'll still have to find the bullet it likes, and, you'll have to find the right powder and weight of the charge that it likes as well.
I'd get either the Nikon or Leupold scope that you like best. Make sure it's made for shotgun use (ie long eye relief!!!!!) and will withstand the recoil. I'd opt for a 2-4 power scope.

IF YOU STAY WITH YOUR SHOTGUN YOU MUST TRY DIFFERENT LOADS WITH SABOTS. WHAT MY FRIENDS AND I FIND IS THAT TIME & TIME AGAIN THE LIGHTFIELDS WORK EXCELLENT AND WE ALL USE DIFFERENT SHOTGUNS.
I HAVE A FEW RIFLED SLUG GUNS WITH SCOPES. I HAVE A 3-9x40 LEUPOLD, 1.5-5 BUSHNELL TROPHY ON 2 SHOTGUNS, AND MY MUZZLELOADER I HAVE A NIKON BUCKMASTER 3-9x40, FOR THE MONEY THAT BUCKMASTER SCOPE IS CLEAR & CRISP
