I think both options you propose would work great, and would be operationally indistinguishable in actual on target effectiveness, given equal shot placement.

I use a 270 for deer and black bear since the hunting seasons overlap. Coyote is on the menu if I see one because I'm hunting on a cattle ranch. I think a 243 is perfect for deer and coyote (if you're not saving the fur). I would prefer a .308 over a .243 for black bear though. Not saying you can't kill a bear with a 243 but I like a little extra margin when I'm hunting a bear.
