I' m assuming we' re including shotguns as well. I' d take a 22LR, 12 gauge, and a .308.
If shotguns aren' t included, I' d go with a 22LR, 22-250, and a 300 Winchester Mag.

Only 3 -- harkens back to when I was 16, nowadays I would choose:
Including shotguns: 22LR, 338 Win Mag, 12 gauge.
Excluding shotguns: 22LR, 7mm Rem. Mag, 338 Win Mag.
Excluding shotguns & 22' s: 22-250, 7mm Rem. Mag, 338 Win Mag.
If you only have a few, keep them spread out -- no sense in clustering a group of essentially equivalent cartridges.

Bigbulls,
Easy, upon securing the safari (usually 6 month to a year in advance with half the money down) I would do one of the following four to remedy the problem:
**Sell one of my (imaginarily limited) three and replace it with the Big Bore needed for the trip, or
**Borrow a Big Bore from a friend, or
**Rent a Big Bore in Johannesburg upon arrival, or
**Use the PH' s Big Bore " camp rifle "
Since folks " rifle luggage" don' t always arrive/check through with the passenger -- PH' s are already way ahead of the game on that one -- if you have the money for a safari, they won' t let a little detail like the lack of a rifle stop you).
