I hateo say it, but you might have a money pit on your hands.
You might be able to get a lyman peep sight that can be added to the receiver with drilling and tapping, not sure what a scope mount on one of these rifles would entail. You will need a front sight also, probably a dovetail cut in the barrel or a simple sight base from a mauser 98 might wrk if soldered on.
Finding hunting ammo might be a problem also. Reloading isn' t going to be easy either, as Italian 6.5mm bores (if its a carcano barrel) have a .268" bore while standard 6.5 bores are .264" . There' s a reason why Carcanos don' t show up too often as somtehing that is sporterized.
