You really probably need to switch to the small game forum for more responses. A squirrel is a bit difficult until you get sme experience. I start from the tail. A rabbit is easier as the skin is much looser. I actually start them from the head. I am sure there are as many ideas as there are skinners.

With a squirrel, make a slit in the skinacross his back about half-way down. Almost as if you're trying to cut him in half but you just want to slit the skin open, don't touch the meat with the blade. Make a slit large enough to slip your index finger and middle fingers of both hands into the slit and simply pull his skin apart. If it's done correctly you'll pull his skin off of him like slipping a jacket off and a pair of pants off. The jacket goes over his head and the pants goes down his legs. Snap his legs off at the elbows, cut his head offand you'll have a whole squirrel. Gut him, clean him and put 'em in the pan.

You can do either. I've had them fried, like chicken, and I've had them slow cooked like a pot roast, in the crock pot. Either way, they're really good.

The best way to eat squirrel is to boil the meat of the bones and make dumplins. There's nothing better than squirrel and dumplins! Hunt for young grays, the old red foxsquirrels are tough as shoe leather.
