Yes he does Phil...I beat him in tennis last week..7-5 first time in ages..We are going to the tennis courts this morning as well..
I'll be smoking with hickory wood today..trying 3 new meats..
Salmon....Corning hens and whole chicken breast..Pics will be coming..I will start the smoker about 10:00 I believe the salmon will take about 3 1/2 hours and the others about 5 hours...not sure..

Ok...My smoker does better with smaller cuts of meat..steady 250 degrees.

The Salmon was my wiffe's all timefavorite way of preparing it..It was not dried out as one might think..It was smoky and moist and flakey done..

I like smoking the smaller cuts better..Only took one pan of coals and all was done in 3 hours..
A special note though to folks who have not used one.You will need to clean the smoker out before using it,,It does a wonderful job removing much grease from the food but the grease goes everywhere and will fall back on your food from the top and sides..so I would suggest you clean your smoker before cooking..the cooking process is on a pretty low heat and I would't want anyone getting sick..the food taste is secone to none..I was shocked of how well the salmon came out..My wife did an herb and garlic rub on it.We grow our own herbs..
