It really all depends where I would be living at and the fish available..
For where I live at Crappie are the best.

Fillet fish
Soak OVER NIGHT in buttermilk.
mix flour, seasoning salt, lots of pepper and corn meal together
Dredge fillets in mixture.
Carefully place fillets in a cast iron skillet of medium hot oil.
When both sides are golden brown remove to paper towel.
Serve with sides and enjoy.

Note..without the buttermilk the texture is mushy. With the buttermilk the texture is as firm as bass. Learned this trick from a New Yorker

1. Fresh Ahi Tuna Seared rare with soy ginger sesame oil
2. Foleys* Block Island Swordfish
3. Rainbow Trout
4. Mahi-Mahi
5. Striper
