A sharpening steel like the butchers use don't sharpen the knife, it only straightens the edge of the knife. A butchers or meat cutter's knife's edge gets wavey or crooked with just a little use and the steel puts it back straight. That's why you see meat cutters using the steel every few minutes.
Yeah, I used to be a union meat cutter for Wilson Certified Foods.
