RE: Deer Heart Anyone?
I do and love it!! I always soak them in saltwater for an hour or so, then slice thinly and dredge in flour and fry in butter til golden brown. I will have to try some of these different recipes next year, they sound really good. :)

RE: Deer Heart Anyone?
Trap heart is not an organ, it is pure muscle. Go for it.

RE: Deer Heart Anyone?
Haven't had deer, but Elk heart is excellent and must be similar. I usually cook it in a pressure cooker first to tenderize. Then use it for chile, or fried. Fresh is best sliced and fried with onion if flour and grease, catsup and fried potatoes. We fight over it in the tent! It freezes well, just be sure it is dry and double wrapped.
