Deer Heart Anyone?
Just curious who else out there saves and eats the deer heart. I started doing this several years ago. It's an excellent cut of meat; smooth muscle and very tender. I simply cut it into three or four fillets and marinate it in soy sauce and Worchestershire sauce overnight. Cook it over a low flame on the grill just medium rare. I'd put it up against any steak.
My daughters will actually fight you over it. My brother-in-law wouldn't try it till I reminded him that I tried a carp sandwich with him in Nebraska. <img src=icon_smile_dead.gif border=0 align=middle> We didn't like the sandwich but he did like the deer heart. So ... how 'bout it? Anyone else? Romans 8:28 |
RE: Deer Heart Anyone?
I like it lightly rolled in flour and fried quickly in just a touch of grease. Serve with some raw onions and mushrooms. It is hard to beat.
One question though...did anybody ever try freezing heart and how did it turn out? |
RE: Deer Heart Anyone?
I LIKE IT ROLLED IN FLOUR AND THEN DEEP FRIED, THEN YOU DIP IT IN SOME RANCH OR BLUE CHEESE DRESSING.

RE: Deer Heart Anyone?
The heart is the first thing I eat, it is a personal tradition for me. I stir fry it.
deer heart sliced thin 3-4 medium onoins sliced thin 1/2 pound broccoli 1/2 cup soya sauce 1/8 cup sherry 4 tablespoons sugar 1. soak venison in salt water overnight 2. mix soya, sherry, and sugar well and marinade venison in it over night. 3. in wok or deep pan stir fry the onions on high with 1 tablespoon sesame oil and 1 tablespoon oil until onions are soft and turning brown, remove from pan. 4.put more oil in wok/pan if needed and pour in venison and marinade and cook on a high heat until almost done. 5. add onions and frozen brocolli and cook until brocoli is done. serve over rice Note you may want to make more sauce than I am calling for to flavor your rice. ![]() The Tazman |

Pro-Line, I've frozen it before and as far as I can tell it's fine. Got one in the freezer now.

RE: Deer Heart Anyone?
interesting, I might try it.
The only thing I had ever done with heart is use it for catfish bait. |
RE: Deer Heart Anyone?
Gasser that is sacrilidge!!!! The heart is pure muscle with virtually no tendon, man it is some good eating, the only thing in my book that is better is backstrap. Of course it may be it is so good to me because it is always the first part I eat.

RE: Deer Heart Anyone?
We always eat the heart. Cut it up and throw in a frying pan with a little butter and put on fresh rye bread. I'm getting hungry just thinking about it.

RE: Deer Heart Anyone?
I have had it in the feild fried up with a little garlic(cut very thin) and put on a bun.
But the best ever was a moose heart that I cut up into cubes (about 2" or so)and put in the slow cooker with onions, garlic (lots), Celery, couple spoons full of black pepper. Put on low and cooked all night, next morning got up put in some potatoes, and carrots and went to work. when I got home that night the house smelled awesome, the liquid had browned up real nice. I have to say that it was the best thing I have eaten ever. It would put any roast to shame anytime....Now I am getting hungry too!!!! |
RE: Deer Heart Anyone?
Greets,
Lotsa new ways for me to try cooking it! the only way I have ever had it was stuffed and slow cooked in a crock. Take 1 deer heart,(fresher the better), valves and sack cut off. Stuff it with sliced mushrooms and green bell pepper, ( add stuffing or rice mixture if you like ) Set into crock pot in a way that allows you to prop it up, stuffing on top. cover in sauce made from campbells cream of mushreoom soup, condensed. I use only half can of water instead of the usual full can. Let the crock go for at least 3 hours, I go 4 to 5. ( I know over cooking venison can ruin it, but trust me! this is the best! ) Yummy!! BTW I will be trying some of the frypan methods I have seen with my next heart! Just my uneducated opinion! Terry Edited by - Adui13 on 03/16/2002 00:38:26 |
RE: Deer Heart Anyone?
another good way to cook the heart is to dice it into 1/4" to 1/2" cubes and slow cook it in a crock pot with potatoes, and veggis of your choice in a nice gravy. Sort of a heart stew. I love it that way !!!!!

RE: Deer Heart Anyone?
DARN! I never knew... I've left more hearts on the ground than I would care to mention. Please forgive me. I will try it next time. Of course some of the guys I hunt with don't cut out the tenderloins immediately, and I just broke them in to doing that this year. Now I am the fool. Thanks for the tip!

I have had it in a crock pot before but never sliced and fried. Sounds like a great sandwich, I'll have to try it this year.

RE: Deer Heart Anyone?
Haven't had deer, but Elk heart is excellent and must be similar. I usually cook it in a pressure cooker first to tenderize. Then use it for chile, or fried. Fresh is best sliced and fried with onion if flour and grease, catsup and fried potatoes. We fight over it in the tent! It freezes well, just be sure it is dry and double wrapped.
