Might as well keep this topic going...

Tonight I'm making a venison roast. I started marinating it on Sunday. The marinade is olive oil, Ken's Italian Dressing, garlic, and sherry. Before I put the roast in the marinade, I cover it liberally with onion powder.

I'll take it out of the marinade and wrap it in bacon and cook it on low in the crock pot for about 6 hours.

Since our school was cancelled today, I have the whole day to work on it...or go rabbit hunting. Sometimes it's nice being a teacher. :)

CAPT BRAD 02-27-2002 07:34 AM

RE: Supper tonight

Were having rabbit tonight. Last night I used the rest of the hamburger and a leftover smoked pork roast and ground them together. It didn't come out very well. Too smokey. I wish rabbit season was still open here as this is my last one. BTW, why is school out today? Good Luck. Capt Brad.

RE: Supper tonight

Capt Brad, we had a good rain yesterday...then the temp dropped to about 10 overnight. Combined with about 3" of snow and 25mph wind the roads are a little nasty. It's not really all that bad, but we get 5 days a year to use, and we haven't used any yet. They weren't taking any chances. I'm not complaining!

Pro-line,
Keep it going. I'll post every night it's my turn to cook.

Tonight we're having smoked deer sausage (my buddy processes it in his kitchen and makes it SPICY) and a fresh spinach salad with mushrooms and my home made dressing.

Pro-line, we got ya'lls weather late last night. We didn't get any snow, and very little rain(I wish we had), but it turned cold as h&!!. If you want to continue this thred, ya'll are gonna have to share your recipies. I can't stand settin here every night with my mouth waterin'. Hope you got to go rabbit hunting today. Good Luck. Capt Brad.

RE: Supper tonight

I didn't go rabbit hunting. I went and looked at guns and bought a turkey decoy.

I was considering going until I went outside. The windchill is way below zero and the snow is blowing sideways. Isn't fit for man or beast.

Hunt4Fun, I'm home from work by 3...So I cook every night. I love cooking, I just don't like dishes...so that's our tradeoff.

Last night, we had New York strips and fried shrimp, sweet potato's, and broccoli. Tonight it was fried chicken, fried okra, and sweet potato bisquits. I was glad too as we have eaten either deer, goose or rabbit almost every day since Nov. 1st. Good Luck. Capt Brad.

RE: Supper tonight

Sorry, I was off the board for a couple days as the flu took this family like "Grant took Richmond." I cook goose 2 ways. For Canada's, I pick them and leave the skin on. Then I rub with olive oil, sprinkle w/season-all, lay about 6-8 pads of butter on the breast, and sprinkle with a lot of parsley. Breast up in a 400 degree oven for 50 mins. They will be very rare. I then slice the breast as thin as possible across the grain. Remove legs and thighs and discard carcass. If to rare, put back in dish and return to oven for 5-8 mins. Searve over rice or potato's. Eat goose rare as the more you cook, the tougher it gets. For snow geese, I breast them and soak in McCormicks Meat Marinade for an hour or 2. Then grill like your favorite steak. Good Luck. Capt Brad.

P.S. Here of late, I have ground some of the Canada's and found them to make excellant chile. Alway's trying to cover up the real thing though. Which brings us to another topic. What's your favorite game to eat just the way it is. I think mine is deer, but I like doves a lot also. Maybe a new thread for this topic. Good Luck. Capt Brad.

Well, usually when I cook, its deer meat or gator or any other game meat on a camp fire, just love the taste a fire adds.

Pro-line the best way to cook a goose is to breast it and bake it. Otherwise it is too tough. When we get geese we just take out the breast and toss the rest..
