Slice potaotes kinda thin, dice an onion and some bacon. Fry all in a large skillet with butter. When potaotes are tender add egg that has been whisked. When egg is done, top with cheddar cheese and melt. salt and pepper to taste. hubby and son loves it, and tops with ketchup.

simple -

cut up some taters, add some onion, put in big pan, add oil or margerine, and spice with desired seasoning, cook untill they are done
